4 cups chicken broth
5 cups fresh broccoli florets cut into small pieces
4 ounces softened cream cheese
2 cups heavy whipping cream
2 cups shredded cheddar cheese
2 tbsp grass fed butter
1 small sweet onion, diced
1 tbsp minced garlic
Salt & Pepper
1.Chop up the broccoli crowns into small pieces and set aside.
2.Set the instant pot to sauté and add the butter, minced garlic and diced onion.
3.Saute for 3 minutes, or until onions are cooked.
4.Add the chopped broccoli and stir.
5.Add the chicken broth.
6.Close the top of the instant pot and set on cook, high pressure for 2 minutes.
7.When done, do a quick release of the pressure.
8.Add the cream cheese and stir until melted.
9. Once cream cheese is melted, add heavy whipping cream.
10.Stir in cheddar cheese 1/2 cup at a time until melted.
11. Season with Salt and Pepper.
