Italian Sausage Zucchini Bake


4 medium zucchini

2 tbsp olive oil

Sea salt (for sprinkling)

1/3 cup onion, diced

1 lb ground italian sausage

2 tbsp minced garlic

14.5 oz diced tomatoes (drained)

1/3 cup grated parmesan cheese

1 tsp italian seasoning

1 cup mozzarella cheese


  1. Brown ground italian sausage and set aside.

  2. Put olive oil in pan on medium-low heat and add diced onion, diced zucchini and minced garlic. Saute for 3-5 minutes.

  3. Add italian season and sprinkle with salt. Mix well.

  4. Add cooked sauced and drained diced tomatoes, mix together.

  5. Top with parmesan and mozzarella, cover until cheese is melted.

  6. Serve immediately.
