2-3 chicken breasts cut up
1/2 onion chopped
4 tbsp olive oil
2 tbsp minced garlic
16oz box of penne pasta
7oz jar sun dried tomatoes, drained and chopped
4 cups chicken broth
1/2 cup heavy whipping cream
1 cup marinara
Heat up 2 tbsp olive oil in pot and cook chicken with desired seasonings. Remove from heat and set aside.
Add 2 tbsp olive oil, onion and garlic, cook for 2-3 minutes.
Add in broth, marinara, sun dried tomatoes and penne pasta. Boil according to pasta package.
Add in heavy whipping cream and chopped spinach.
Stir till spinach is wilted and than add in Parmesan cheese and chicken.
