¼ cup Cilantro or coriander leaves fresh or raw
1 tsp Garlic powder
2 tsp Cumin seed ground or whole
1 tbsp Chili powder
1½ cup Vegetable broth
28 oz (794 g) Fire roasted diced tomatoes
2 cup, cubes Sweet potato raw
8 ounce (227 g) Beef ground 95% lean 5% fat raw
1 cup, chopped Peppers sweet red raw
1 cup, chopped Onions raw
1 tablespoon Olive or extra virgin olive oil
Place a pot over medium-low heat. Add oil, diced onion, diced pepper, and ground beef.
Add chopped sweet potato, crushed tomato, broth, and spices to the pot. Boil for 25 minutes, or until the potatoes are soft.
Use a potato masher or whisk to slightly smash the potatoes, thickening the chili.
