INGREDIENTS:
1 1/2 chicken breasts cooked and shredded
2 tbsp olive oil
1 bag frozen riced cauliflower
1/2 bag frozen mixed veggies of choice, I used peas and carrots
1/2 onion chopped
2 tbsp minced garlic
2 eggs
INSTRUCTIONS:
Sauté frozen veggies and onion in olive oil. Once cooked, add minced garlic and stir.
Add 2 eggs and scramble with the veggies.
Add in frozen riced cauliflower and stir until cooked through.
stir in chicken until heated through.
Top with soy sauce and enjoy!
