Chicken thighs and Creamy Cheesy Bacon Brussel Sprouts


1 lb Brussel Sprouts (cut in 1/2)

6 to 8 pieces of thick bacon

4 Chicken thighs

1/4 chopped red onion

1/3 cup Heavy whipping cream

2 Tbsp Sour Cream

1 Tbsp minced garlic

1 cup cheese (I used Colby jack)

1/8 cup Parmesan

Salt & pepper, onion powder to taste


  1. Cook bacon until crispy, remove from pan & chop or crumble.

  2. Cube or slice chicken thighs and cook in pan with a bit of the bacon grease.

  3. Add onion & minced garlic

  4. Drain excess liquid from chicken and set aside

  5. Add Brussels to pan with bacon grease & sauté until crispy & golden brown.

  6. Remove from pan & place in 9x9 casserole dish.

  7. Cheesy Sause: (use pan with bacon grease)

  8. Add heavy whipping cream, sour cream & cheese, simmer a few minutes

  9. Add seasonings of choice

  10. Place chicken pieces mixture over sprouts & pour over cheesy sauce. Top with bacon crumbles & Parmesan cheese and bake for 10 min on 350 degrees
