Creamy Tuscan Chicken

INGREDIENTS

  • 2 pounds boneless skinless chicken breasts or thighs

  • 6 cloves garlic minced

  • 1 cup baby bella mushrooms

  • 1 cup heavy cream

  • 3/4 cup parmesan cheese

  • 1/3 cup chicken broth

  • 1 tablespoon Italian seasoning

  • Sea salt

  • Black pepper

  • 1/2 cup chopped sun dried tomatoes

  • 2 cup spinach

INSTRUCTIONS

  • Place the chicken in the bottom of slow cooker. Season with salt, pepper and Italian Seasoning. Top with sun dried tomatoes and baby bella mushrooms.

  • Add remaining ingredients (except spinach) making sure to pour on top and coat chicken and veggies.

  • Cover and cook on high for 3-4 hours or low for 6 hours.

  • Remove chicken from slow cooker and add spinach and turn crock to high. Cover and cook for 5 minutes or until spinach is wilted.

  • Pour sauce over chicken.

  • Serve with pasta or rice. If keto serve over califlower rice.
