Ingredients
For the salad
10-11 strips bacon, cooked and diced
2 heads broccoli, chopped
1 cup dried cranberries
1/3 cup sunflower ketnals
1 cup shredded cheddar cheese
1/3 cup chopped red onion
For the dressing
1 & 1/4 cups mayonnaise
1 lemon zest
1 tablespoon lemon juice
2 tablespoons white wine vinegar
1/4 cup monkfruit sweetener
1 & 1/4 teaspoons kosher salt
1/2 teaspoon black pepper
1/4 teaspoon dry mustard
Mix all dressing ingredients together and set aside.
Combine all salad ingredients, pour in the dressing and mix well.
You can serve immediately or refrigerate up to 3 days.
