Keto "Potato" Skins

INGREDIENTS

1 bag (20oz) cooked cauliflower rice

1/2 cup grated Parmesan

1 egg 1/2 cup melted butter

1/2 cup cheese

1/4 cup Bacon chopped

Salt and pepper to taste


INSTRUCTIONS:

Combine cauliflower (use a dish cloth to get out all moisture) Parmesan cheese, egg, butter, salt and pepper.

Divide into muffin tins. Press Ingredients down with spoon.

Bake at 400° for 20 to 25 minutes. Remove and add cheese and bacon. Put back in oven for 5 to 10 minutes.

Top with sour cream & enjoy!!
