Pumpkin Pie Chaffle


1 tbsp pumpkin purée

1/4 tsp pumpkin pie spice

1 tsp monkfruit or sweetener of choice

1 tbsp almond flour

1 egg

1/3 cup mozzarella

1/4 tsp vanilla

Cream cheese filling: 2oz cream cheese at room temperature 1 tbsp monkfruit sweetener

Whisk all ingredients for the chaffle besides the mozzarella, add that last. Pour 1/2 the mixture into the waffle maker, cook about 3 minutes.
