Shaved Brussel Sprout Salad with Apples and Goat Cheese


For the dressing:

  • 2 tablespoons white wine vinegar

  • 3 tablespoons lemon juice freshly squeezed

  • 1 small shallot chopped

  • 4 tablespoons olive oil

  • 1 teaspoon salt

  • ¼ teaspoon black pepper

For The Salad:

  • 1 pound Brussels Sprouts shredded*

  • 1 apple thinly sliced

  • ½ cup dried cranberries

  • ½ cup hazelnuts or walnuts lightly roasted

  • ⅔ cup goat cheese crumbled


  • To make the dressing, whisk together all the dressing ingredients in bowl.

  • Place the shaved brussel sprouts in a large salad bowl and drizzle it with the dressing. Give it a toss. Cover with stretch film and let it sit for 30 minutes.

  • Add in the slices of apples, cranberries, and hazelnuts. Gently toss.

  • Top it off with crumbled goat cheese and serve.
